At a Glance
Twenty rooms on the edge of Apollonia, each facing the Aegean. The architecture follows the island’s logic: building volumes broken into sections, low and grouped, the way Cycladic villages have always been arranged. Inside, the materials read like a map of the islands. Marble from Naxos and Paros, stone from Santorini, olive wood furniture made by local craftsmen, silk and linen woven nearby. The colour palette is Sifnos itself: brick red for the ceramics, dusty blue for the sea.
The saltwater pool sits among white marble and open sky, the Aegean somewhere beyond. Pilós, the restaurant, draws from the kitchen garden and the morning’s catch. Yoga and Pilates instructors are on hand overlooking the sea while bicycles are on hand to borrow and explore the island. The team, led by Vasiliki, are the kind of people guests mention by name when they get home.

Dining
Pilos: Named after the Greek word for clay, a nod to Sifnos’s identity as the pottery capital of the Aegean. Chef Gikas Xenakis builds the menu around what the island actually produces: fresh seafood off the boats, vegetables and herbs from Bostani, the hotel’s own organic garden, and produce from small local farmers. The result is modern Greek cooking that tastes like it belongs here. Family-style dining, Aegean views, and a serious Cycladic wine list. Open to hotel guests and the public.
